for this recipe.1/4 cup vegetable oil (you can use vegetable oil if you wish)1/8 cup grated carrots1/16 cup finely grated celery1/3 cup finely diced onion (chopped)1 small onion, minced1/6 cup finely minced garlic1/12 cup finely sliced shallot (optional, optional)1 teaspoon kosher salt1 teaspoon freshly ground black pepper (use less)1 1/4 cups shredded carrots, stems removed1/1 cup chopped celeriac, stem removed1 cup griddled, griddled cornbread crumbs (optional: use a vegetable peeler)1.
Combine all ingredients in a food processor or blender.
