A UK barbecue grill company has raised £1.6m in seed funding, which will enable it to open a second location.
The new lodge barbecue restaurant will be located on a 40,000-square-metre site at the centre of the country’s capital, Edinburgh.
The Scottish National Party (SNP) has proposed that the new restaurant be the first in Scotland to feature a barbecue grill.
The restaurant will also offer “authentic” Scottish cooking in a space that is “fully accessible” to the public, said the company’s CEO, John Hutton.
“It will provide a real alternative to the foodie lifestyle, and the people who currently spend so much time and money dining at our restaurants,” he added.
A lodge barbecue has become a popular dining experience for Scottish people, particularly those who have a love of the outdoors.
“We’ve already done a lot to attract new diners, so the idea is that we could bring that same passion to our second location,” said Hutton, who said the lodge barbecue could have a “huge impact on our restaurants”.
Mr Hutton said the Scottish Government had been supportive of the project.
“They’ve said they’re really keen to see it and we want to make sure it’s a success, and so that’s why we’re investing in it,” he said.
“And we’re going to try and keep it going in the best possible way, which is to bring it to as many people as possible.”

“The Scottish Government has set aside £1m of capital to build the lodge, which could be used for a new restaurant.
Mr Huttons family owns Lodge BBQ and the lodge is a popular tourist attraction in the area.”
People come here to see the lodge and see the barbecue, and I think they’re very keen to try the food and see it for themselves,” he told BBC Scotland.”
If it’s successful, we could be bringing it to more people.
“So we’ve got a long way to go but we’ve already invested in it.”
Mr Houlds family, who has owned Lodge BBQ for more than 30 years, said his family was keen to be involved in the new lodge, as well as the lodge itself.
“Our main concern is the quality of food, and we’re very proud of that, so that should be the main thing we look at, to make the best quality of the food we can,” he continued.
“The lodge itself is a really great restaurant, and it’s got the best barbecue in the world.”
The new Scottish restaurant is to be opened in 2019.
